“There are three things I’ve learned never to discuss with people: religion, politics, and the Great Pumpkin.”
– Linus, in It’s The Great Pumpkin, Charlie Brown
Oh Linus. Maybe we can get on board with the PC respect for the first two, but pumpkins are ALWAYS up for discussion at the NJYC offices.
Especially after we perused the Edgy Veg’s blog and found these 8 VEGAN pumpkin-loaded recipes.
From mac & cheese to a latte that is hands-down better than the one at the find-it-on-every-corner coffee place (you know which one we mean; it may or may not rhyme with CarTrucks), the Edgy Veg has exponentially elevated our pumpkin vibes.
If you find yourself with some trick-or-treating down time today, head into the kitchen and try the Edgy Veg’s pumpkin chili. Or just save all the recipes and savor them in November (you’ll obviously want to make the pumpkin pie for Thanksgiving).
